It’s the pumpkin season and we have some really amazing pumpkin spice recipes that go beyond your basic Starbucks Pumpkin Spiced Latte. Sure, it is a crowd favourite, but why not just sprinkle a little bit of this magic ingredient over everything to make it even better? So, check out some really easy and fun recipes that you can try this weekend and make the most of the fall season!

1. Mini Pumpkin Pies

Ingredients:

Cooking spray or melted butter, for muffin tin

1 batch of pie dough

All-purpose flour, for surface

300 grams of pumpkin puree

1 cup sweetened condensed milk

1 large egg

1/4 tsp sea salt

1 and 1/2 tsp pure vanilla extract

1/2 tsp ground ginger

1 tsp ground cinnamon, plus more for serving

1/8 tsp ground nutmeg

3/4 cup heavy whipping cream

Milk chocolate bar, chilled, for serving (optional)

Method:

Take a rack and arrange it in the centre of the oven and preheat to 200°C. Then, spray the bottom and sides of a mini muffin tin with cooking spray or brush with butter. Next, on a lightly floured surface, roll pie dough to about 1/8″ thickness and cut out rounds using a 3″ cutter. Reroll scraps and cut more rounds as needed until you have as many as you desire.  Now, transfer the rounds to the prepared muffin tin, pressing dough into the bottom and sides, and refrigerate until it is firm, for about 15 minutes.

Meanwhile, in a large bowl, whisk pumpkin puree, condensed milk, egg, vanilla, cinnamon, ginger, salt, and nutmeg until smooth and well combined. Spoon the filling into prepared muffin cups to reach almost all the way up the sides, about 1 tsp. Now, bake the pies until the centre is set and puffed and the edges are golden, for about 25 to 30 minutes. Let them cool in the pan for 10 minutes as the pies will deflate as they cool. Then, using a small offset spatula or a spoon, gently remove pies from the tin and transfer them to a wire rack and let them cool completely. Till then, take a large bowl, whip cream to make soft peaks, and top each pie with a dollop of whipped cream. And lastly, shave chocolate on top of pies with a vegetable peeler, if using, and sprinkle some cinnamon powder.

2. Pumpkin Cream Cold Brew

Ingredients:

1/2 cup cold brewed coffee

1/3 cup heavy cream

1 tbsp pumpkin puree

1 tbsp honey

Pumpkin pie spice

Ingredients:

Take a tall glass, pour 1/2 cup of cold brew coffee over ice, and stir in 1/4 cup of water. Then, in a small bowl, combine heavy cream, pumpkin, and honey. Whisk it till the cream stiffens and just barely holds its shape, for about 1 minute. Lastly, spoon the cream over the cold brew and sprinkle with pumpkin spice for a delicious fall recipe.

3. Pumpkin Spice Martini

Ingredients:

2 tbsp granulated sugar

3/4 tsp pumpkin pie spice

120 ml vodka

3 tbsp whole milk

1 tbsp heavy cream

3 tbsp pumpkin puree

2 tbsp maple syrup

Whipped topping, for garnish

Cinnamon sticks, for garnish

Method:

Take a bowl and combine sugar and pumpkin pie spice in it. Then, using some water, wet the rim of the martini glasses and dip the glasses in pumpkin spice sugar to coat the rim. Next, fill a cocktail shaker with ice and add vodka, pumpkin puree, and maple syrup to it. Mix 3 tbsp milk and 1 tbsp heavy cream together and add them to the mixture. Shake vigorously until chilled and strain into glasses. Finally, top it with whipped cream and sprinkle the remaining pumpkin spice sugar mixture. Serve with cinnamon sticks and toast to this boozy pumpkin spice recipe.

4. Pumpkin Spice Muffins

Ingredients:

For the topping

1/2 cup all-purpose flour (maida)

1/4 cup granulated sugar

1/4 cup dark brown sugar

1 tsp pumpkin pie spice

Pinch of sea salt

4 tbsp butter, melted

For the muffins

1 and 1/2 cups all-purpose flour (maida)

3/4 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp sea salt

1 tsp cinnamon

2 tsp pumpkin pie spice

1 cup canned pumpkin

2 large eggs

6 tbsp butter, melted and cooled

1/4 sour cream

1 tbsp pure vanilla extract

Method:

Preheat oven to 200°C and line muffin tin with liners. Start making the crumb topping by combining flour, sugars, pumpkin pie spice, and salt in a medium bowl. Stir in melted butter until crumbs form. Next, take a large bowl and whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. To this, add pumpkin, eggs, butter, sour cream, and vanilla, and mix until combined. Once done, divide the batter into muffin liners and top each with crumb topping. Bake until muffins are golden brown and a toothpick comes out clean, for about 25 minutes. Let the muffins cool in the pan, and serve.

5. Pumpkin Cheesecake

Ingredients:

For the crust

2 cups digestive biscuit crumbs 

2 tbsp granulated sugar

1/2 cup unsalted butter, melted

For the filling

10 ml unflavoured gelatin

250 ml cream cheese, at room temperature

500 ml pumpkin puree

1 cup sour cream

3/4 cup granulated sugar

2 tsp pumpkin pie spice

1 tsp pure vanilla extract

Method:

Start by heating the oven to 200°C. Then, in a medium bowl, combine the digestive biscuit crumbs, sugar, and butter. Next, transfer the mixture to a 9-inch springform pan and press the mixture into the bottom and 2 inches up the sides of the pan. Bake until set, for about 8 to 10 minutes, and let it cool.

Meanwhile, start making the filling by sprinkling the gelatin over 1/4 cup of boiling water. Let it stand, stirring occasionally until dissolved, for about 5 minutes. Next, using an electric mixer, beat the cream cheese until smooth. To this, add in the pumpkin, sour cream, sugar, pumpkin pie spice, and vanilla, and mix well. Once done, fold in the gelatin mixture until incorporated. Lastly, pour the mixture into the crust and refrigerate covered, until firm, for at least 2 hours and up to 2 days. Enjoy this delicious pumpkin spice recipe!

6. Pumpkin Spice Mules

Ingredients:

1/2 cup vodka

1/4 cup apple cider

350 ml ginger beer

Pumpkin spice, for garnish

Cinnamon sticks, for garnish

Method:

Take 2 copper mugs and fill them up with ice. Then, divide the vodka and apple cider between mugs, and top them off with ginger beer. Lastly, sprinkle a little pumpkin spice on top, garnish with a cinnamon stick, and sip the perfect pumpkin spice cocktail.

7. Pumpkin Pie Dip

Ingredients:

2 cups heavy cream

100 grams vanilla pudding mix

1/2 cup canned pumpkin

2 tsp pumpkin pie spice

Breadsticks or crackers for serving

Method:

Take a whisk and beat the heavy cream and vanilla pudding mix until stiff peaks form, for about 1 to 2 minutes. To this, add canned pumpkin and pumpkin pie spice and stir to combine. Chill, if desired, and serve this easy pumpkin spice dip with breadsticks or crackers!
