Even though every other place, from parlours to restaurants, is opening up, you might feel a little hesitant to step out. I personally still prefer being home. And I know every place is following strict safety and hygiene measures, but when someone asks me if I want to step out for the weekend, I refuse straightaway. However, lately, I have been craving some good old fried chicken, but not just any fried chicken. You know, the juicy, crispy, and aptly spicy KFC fried chicken. Got you drooling already?

When I was asked this weekend if I wanted to grab some KFC, I faced the biggest dilemma of my life. I could not convince myself to step out, but I invited a friend over and decided to do some DIY.

So, if you have been facing this dilemma too, you are in the right place. Just because you can’t step out, it doesn’t mean you can’t have some scrumptious fried chicken at home. Follow this recipe, because it is a lifesaver and the perfect meal for dinner, lunch, or anytime in between.

How to Make KFC Style Fried Chicken

Serves: 4

Total Time: 1 hour

Ingredients:

For the marinade:

1/2 kg chicken drumsticks or breast

100 ml curd

1 tsp salt

1 tsp red chilli powder or paprika

For cooking:

1 egg white

2 tbsp cornflour

1 cup fine bread crumbs

1 and 1/2 tbsp red chilli or paprika

2 tbsp mixed herbs or oregano seasoning

1 tsp salt

1/2 tsp crushed black pepper

1 tsp garam masala

Oil for frying

1 and 1/2 tbsp ginger garlic paste

1 tbsp onion powder

Method:

Start by cleaning the chicken properly and draining any excess water. Then take a bowl and add curd, a cup of water, salt, and red pepper in it, and mix well. Next, add the chicken to this mixture and coat it well. Now cover and keep it in the refrigerator for about 4-5 hours or overnight.

Once the chicken is ready, take two bowls. In one, add the egg white and 1/4th cup of the marinade you used for chicken and mix it well. In the other bowl, add the finely crushed bread crumbs and set it aside.

Next, remove the chicken from the marinade and drain the leftover marinade. Mix all the ingredients for seasoning and rub this mixture on the chicken till it is coated well.

Now, bring the two bowls, one with bread crumbs and one with egg and marinade, and grab a plate as well. One by one, take the chicken pieces and roll them in the egg batter and then in the bread crumbs. You can repeat this twice for extra crispiness. Finish all the pieces and set aside on the plate for about 15 minutes.

Now, get a kadhai or a pan with a deep bottom, add oil in it, and let it heat over a medium flame. Once the oil is hot enough, start adding the chicken pieces 2-3 at a time and deep fry on medium heat. Let the pieces cook for about 10 minutes and take them out when they turn golden brown on each side. Repeat it with the rest of the pieces to get juicy, crispy, and golden-brown chicken.

Once all the chicken is fried, serve it right away with your favourite dip or sauce and enjoy some KFC style fried chicken at home.
