Quarantine doesn’t seem to be ending anytime soon, but our taste buds just won’t quit craving all that baahar ka khaana. And yes, restaurants are now functional and delivering, but if you’re anything like me, the fear of exposure still has you in its grips. One of the worst cravings that I’ve been dealing with is for that fast food deliciousness of McDonald’s. My personal favourite is their spicy paneer wrap, so I tried and successfully recreated it at home. Here’s my version of McDonald’s spicy paneer wrap recipe.

Ingredients:
General:
Tortillas
Paneer (evenly sliced)
4 tbsp oil
Some lettuce (chopped)
1 onion (sliced)
Chipotle mayonnaise (to taste; alternatively, you can mix some ketchup, chilli sauce and mayonnaise)
Mustard sauce (to taste)
Barbeque sauce (to taste)
2-3 cheese slices
For Batter Coating:
2 tbsp cornflour
1/4 tbsp salt
1/4 tbsp pepper
1/4 tbsp Mexican seasoning (optional)
2-3 tbsp water
For Dry Coating:
1 cup nachos (ground in a blender)
2 tbsp bread crumbs
1/2 tbsp red chilli powder
Salt (to taste)
Note: A panini press would be ideal to grill this iconic wrap, but if unavailable, a flat pan or regular grill works as well.
Method:
In a bowl, mix all the ingredients for the batter coating — cornflour, salt, pepper, and the Mexican seasoning. Add some water and mix well to form a smooth slurry.
In a separate bowl, combine all the dry coating ingredients and set aside.
Heat some oil in a deep bottomed pan or kadhai. Meanwhile, take the paneer and coat it evenly in the batter and then the dry nachos mixture. Repeat this coating twice.
Once the oil is hot, slide in the coated paneer slices and shallow fry them until golden brown and crisp on all sides.
Are you ready to assemble your McDonald’s style spicy paneer wrap?
Lay out a tortilla and add the lettuce in a line in the middle. Follow that up with the onions and the three sauces. Layer on the fried paneer cutlets and top them with the cheese slices.
Now, carefully fold your wrap, and place it in the pre-heated and greased panini press. Grill for 2-3 minutes.
