While a lot of us recognise milk as a crucial and nutrient-dense food source, the growing popularity of non-dairy diets calls for some vegan milk alternatives. Though India has some brands that cater to these requirements, most of them are overpriced, and the nutrient availability isn’t too great either. But don’t you fret, we’ve got you covered.

Try these simple and delicious vegan milk recipes at home.

1. Almond milk

Almond milk is a favourite of most non-dairy milk drinkers and makes for a great substitute in coffees and hot chocolates.

Ingredients:

1 cup raw almonds (soaked overnight)

5 cups water

2-3 whole dates (soaked for 2-3 hours)

1 tsp vanilla extract (optional)

A pinch of sea salt (optional)

Method:

Add the almonds, water, dates, vanilla extract, and salt to a high-speed blender jar. Blend for 2-3 minutes, or until smooth. Now, take a nut milk bag or muslin cloth and strain the milk into a separate container. You can use the leftover almond pulp for a baked treat or just as a snack by itself. Transfer the milk to an airtight glass container and refrigerate. Make sure to use it within 4-5 days and shake well before drinking.

2. Oats milk

This oat-based vegan milk recipe is a personal favourite. I use this milk for smoothies, baking, and some healthy chia puddings as well. Make sure to use cold water when preparing this milk since oats tend to coagulate with just the heat of the blender.

Ingredients:

1 cup rolled oats (soaked for 20 minutes)

4 cups cold water

1-2 tbsp maple syrup or honey (optional)

1 tsp vanilla extract (optional)

Method:

Blend the soaked oats, water, honey, and vanilla extract together for 20-30 seconds in a high-speed blender. Double strain the milk blend using a nut milk bag or muslin cloth. Store in an airtight glass container in the refrigerator.

3. Cashew milk

If you’re dreaming of rich and creamy milk to add to your lattes, cashew milk is the way to go.

Ingredients:

1 cup raw cashews (soaked overnight)

4 cups water

1-2 tbsp maple syrup or honey

2 tsp vanilla extract

A pinch of sea salt

A pinch of cinnamon

Method:

Start by draining and rinsing the soaked cashews until the water runs clear. Now, add the cashews and two cups of water to a blender jar. Start by blending on a low setting and gradually increase the speed to ensure that the cashews break and blend well. This can take 2-3 minutes. Once smooth, add the remaining water, maple syrup, vanilla, salt, and cinnamon, and blend until creamy and smooth. Use a nut milk bag or muslin cloth to strain the milk and store it in a sealed glass container in the fridge.

4. Coconut milk

If you thought that coconut milk was only for coconut-based curries and delicacies, I’ve got news for you. Freshly made coconut milk also tastes great in smoothies and vegan ice cream recipes.

Ingredients:

2 and 1/2 cups fresh coconut pulp (or unsweetened shredded coconut soaked overnight)

3 cups water

Method:

Add the coconut and one cup of water to a blender jar and blend well. Strain the milk using a nut milk bag or muslin cloth. Put the remaining pulp back into the blender and blend with the remaining water. Strain the second batch in a separate bowl and then mix it in with the first batch. Store the fresh coconut milk in refrigerated airtight glass containers.

5. Rice milk

This lesser-known vegan milk recipe works as an excellent dairy milk substitute for desserts and baking. You can also add some cinnamon and cardamom to this recipe and have it as a desi summer cooler. The only catch is that, unlike other plant-based milks, rice milk has a shorter shelf life and should ideally be consumed within a day or so.

Ingredients:

1/2 cup cooked rice

2 cups water

2-3 whole dates (soaked for 2-3 hours)

Method:

Add the cooked rice and water to a blender and blend until smooth. Now, add the soaked dates and blend them in well. Strain the rice milk using a nut milk bag or muslin cloth. Chill the strained milk in the refrigerator and serve fresh.

These dairy-free vegan milk recipes are ideal for people with dairy or lactose intolerances and taste amazing as well.
