1. Jelly Donut Holes

Ingredients:

1 and 1/2 litres oil

3/4 cup whole milk

1 packet active dry yeast

1/4 cup granulated sugar, extra for coating

2 large eggs

1 tsp kosher salt

2 tbsp unsalted butter

3 cups all-purpose flour (maida)

1 and 1/2 cups powdered sugar

2 cups mixed fruit jam

Method:

Making the dough:

Take a saucepan and heat milk in it over medium heat till it turns warm but not hot. Add yeast and sugar to it, stir it well, and keep aside for about 5-7 minutes till it turns foamy. Once it gets foamy, whisk the yeast mixture and eggs. Now, add butter and salt and whisk to combine. Next, add flour and keep mixing continuously till it forms into a dough. Knead the sticky dough till it becomes slightly stiff and holds in place.

Next, take a pan and lightly oil it, and transfer the dough into it, cover it with a plastic wrap, and let it rest for about 2 hours or overnight in the refrigerator. Once the dough is prepared and is at room temperature, roll it out and cut small circles out of the dough. Now, lightly oil a baking sheet and place the cut circles onto it, cover it with a towel, and let it rest for about 20 minutes.

Making the donuts:

After 20 minutes, heat oil over a high flame till it becomes hot. Fry 2-3 donuts at a time, flipping till they turn golden brown. Meanwhile, take a wire rack and place it over a baking sheet. Transfer the fried donuts to the rack to let them cool. Take a bowl, add powdered sugar to it and gently toss and coat the fried donuts once they have cooled down. Place them back on the rack. Next, add the jam in a piping bag, cut a narrow slit into the donut, and fill it to the top. Fill in the rest of the donuts, and enjoy this yummy sweet treat with your family.

1/2 cup heavy cream

Cocoa powder, for coating

Shredded coconut, for coating

8. Chocolate Crème Brûlée

Ingredients:

1 egg

4 egg yolks

1/2 cup granulated sugar

3 cups heavy cream

250 gms bittersweet chocolate, chopped

1/4 cup coffee liqueur

1 tbsp vanilla extract

1/4 cup granulated sugar

1 vanilla bean, halved and seeds scraped out

Method:

Making the Crème Brûlée

Preheat the oven to 275 degrees F and place 6 ramekins on a baking sheet with sides. Then, take a medium bowl, whisk together the egg, egg yolks, and 1/2 cup sugar. Take a pan, bring the cream to a simmer over low heat, and take it off the heat. To this, add the chocolate and stir until melted. Now, whisk the hot chocolate cream into the egg mixture till it is combined, followed by coffee liqueur and vanilla. Once done, divide it evenly in the ramekins.

Next, transfer the baking sheet to the oven and carefully pour enough water into the baking sheet to come halfway up the sides of the ramekins. Now, bake it for about 40-50 minutes or until the custards are set on the edges, but still a little jiggly in the centre. Then, remove it from the oven, let it cool completely, and cover and transfer it to the fridge. Now, let it chill for about 1 hour or up to 3 days till it gets firm.

Making the vanilla sugar

Meanwhile, make the vanilla sugar by combining sugar and vanilla bean seeds in a small bowl. Then, let it sit till it is ready to use because the longer it sits, the more flavour it will develop. Finally, when you are ready to serve, sprinkle the sugar over the top of the crème brûlée. And using a kitchen torch, torch the sugar until caramelised and allow it to cool for 5 minutes. If you don’t have a kitchen torch, heat a metal spoon over a flame and lightly press it on the sugar surface. Here’s a helpful video to know how to make crème brûlée without a torch.

You can serve it with sugar cookies for scooping if you like.
