1. Mewa laddoo recipe
Ingredients:
3 tbsp ghee
1/4 cup gond (edible gum)
1 cup makhana
1 cup dry coconut, grated
1/2 cup chopped cashews
2 cups sugar
1/2 cup chopped almonds
1/4 cup pumpkin seeds
1/2 cup chopped pistachios
2 tbsp khuskhus (poppy seeds)
1/2 cup chopped raisins
1/4 cup sunflower seeds
1/2 cup water
1/2 tsp cardamom powder
Method:
Heat two tbsps of ghee in a saucepan, add gond, and roast it on a low flame. Keep stirring the gond until it turns to crystals, then set it aside. In the same pan, roast the makhanas on low heat until crunchy. Allow them to cool, then crush them coarsely. Now, roast grated coconut on a low flame until crisp and aromatic. Add khuskhus to the same pan and dry roast until it starts to pop. Set the mixture aside and let it cool. Heat one tablespoon of ghee on a low flame and roast cashews, almonds, pistachios, and raisins until golden brown. Now, dry roast pumpkin and sunflower seeds until crisp. Transfer the mixture to the nuts and dry fruits bowl and give them a thorough mix.
Add sugar and water to the saucepan and stir it on a low flame until the sugar melts. Boil the liquid on medium heat. To check the consistency of the sugar syrup, touch the liquid with your forefinger and rub it between your thumb and finger. If you gently pull the fingers apart, a thread or string will form. Now, add the nutty mixture and cardamom powder to the syrup and combine well. While the mixture is still warm, grease your palms with oil or water and quickly shape it into laddoos. Once cooled, store them in an airtight jar at room temperature.
2. Makhana laddoo
Ingredients:
1 cup jaggery
1 cup water
4 tbsp ghee
2 cups makhana
1/4 cup roasted peanuts
1/4 cup cashews
2 tbsp pistachios
1/4 cup almonds
2 tbsp pumpkin seeds
1/2 cup dry, grated coconut
1 tbsp sesame seeds
1/4 tsp cardamom powder
Method:
Start by heating jaggery and water in a saucepan on a medium flame. Stir well until the mixture takes a one-string consistency. Let the jaggery syrup cool at room temperature. In another pan, heat two tablespoons of ghee and roast makhanas on a low flame until crunchy. Transfer the mixture to a bowl, heat two tablespoons of ghee in the same pan, and add roasted peanuts. To that, add cashews, pistachios, almonds, and pumpkin seeds. Now, add grated coconut to the mixture, leaving two tablespoons aside. Roast the mixture for 3-4 minutes and then grind to a fine powder. Roast the remaining grated coconut and sesame seeds until aromatic. Combine this mixture with the makhana powder and add cardamom powder to it. Pour the cooled jaggery syrup into the mixture and blend well. Now, grease your palms with some ghee and shape the laddoos.
3. Gond laddoo
Ingredients:
2 cups ghee
1 cup gond
2 tbsp melon seeds
1 and 1/2 tsp dry ginger powder
2 tbsp poppy seeds
4 tbsp desiccated coconut
2 tbsp sliced pistachios
1 cup wheat flour
2 tbsp chopped cashews
2 tbsp chopped almonds
1 cup makhana
1/2 tsp nutmeg powder
1 tsp cardamom powder
1/4 cup powdered sugar

You can roast the gond in 3-4 batches or in one go, ensuring it doesn’t burn or remain hard in the centre. Start by warming two tablespoons of ghee in a pan on a low flame. Once the ghee heats up, add gond to it and keep stirring until it starts to pop up. Transfer the gond to a plate and drain out the excess ghee. Clean the pan and heat two tablespoons of ghee again. Roast melon seeds, poppy seeds, pistachios, almonds, and cashews on low heat. Add desiccated coconut to the mixture and roast them until golden brown. Transfer the mixture to a blender and let it cool. In the same pan, heat one and a half tablespoons of ghee and roast the makhanas.
In the meantime, grind the mixture to a coarse powder. Transfer the same to a bowl. Now, grind the roasted makhanas and add the powder to the mixture bowl. Heat 4-5 tablespoons of ghee on a medium flame and add the wheat flour. Keep stirring the flour on low heat. Add more ghee, nutmeg powder, dry ginger powder, and cardamom powder. Roast the wheat flour until brown. Now, crush the roasted gond with the help of a small bowl and transfer it to the whole mixture. Add powdered sugar to it and mix well. To this, add the roasted wheat flour and combine the ingredients. Grease your palms with some ghee and shape the yummy gond laddoos.
