Farah Khan’s roast chicken recipe

Ingredients:
1 whole chicken with skin, cleaned
1-2 tbsp olive oil
1 tbsp crushed black pepper
2 tsp coarsely ground Kashmiri red chillies
½ tsp spicy chilli flakes (skip if you don’t want the chicken to be too spicy)
3 tsp mustard paste
10-12 cloves garlic, minced
Juice of 3 lemons
Salt, to taste
Method:
Start by drying the chicken with a paper towel. Rub it well with olive oil and salt, making sure to coat both the outside and the inside of the chicken. Next, season the chicken with Kashmiri red chillies, chilli flakes, and crushed black pepper. Then, spread the mustard paste, minced garlic, and lemon juice all over the chicken, including the inside.
Heat a teaspoon of olive oil in a large pan over medium heat. Place the chicken in the pan and cook one side until it turns golden brown. Add warm water to the pan. Make sure the water is enough to cover half of the chicken. Cover the pan with a lid and let the chicken cook for 30 minutes. Then, flip the chicken over and cook for another 15 minutes. Once done, let the chicken rest for 10-12 minutes so the juices spread evenly. Carve it up and serve piping hot.
