Spicy Mango Salad
This is a really easy mango salad that is refreshing, healthy and quick to make. You can make this for a refreshing breakfast on a busy weekday or serve it as a side dish at a party.
Ingredients:
4 mangoes, cut into cubes
1 /4 cup lime juice
2 tbsp extra virgin olive oil
1 tbsp red chilli flakes
2 tbsp chopped cilantro
2 tbsp chopped shallots
Salt, pepper to taste
Method:
Whisk the lime juice and olive oil together in a bowl. Add the shallots, chilli flakes, cilantro, salt and pepper, and whisk to combine the ingredients well. Put the mango cubes in a separate bowl and pour the dressing over them. Coat the mango cubes well. Refrigerate for 30 minutes.
Serve chilled.
Mango coconut lime soup
After salad, a bit of soup always hit the right notes. And sticking with the mango theme, here’s a wonderful recipe for a refreshing mango coconut soup. The best part is, it’s super quick to make.
Ingredients:
3 ripe mangoes
100 gms Greek yogurt
1 /2 cup coconut milk
1 /2 cup low fat milk
4-5 tsp lime juice
1 tsp lime zest
2 tsp honey
Jalapeno seasoning, to taste
1 tsp mint leaves
Salt, to taste
Method:
Cut the mango into small pieces and put in a blender. Add the other ingredients and blend till the mixture is smooth. Pour it into a bowl and chill overnight.
Serve cold.

Malaysian Mango chicken curry
Soups and salads don’t make a complete, satiating meal. Don’t worry, we also have a main course dish for you. Not many people associate mangoes with a chicken curry, but it tastes divine. And it’s a perfect addition to your menu if you’re counting calories.
Ingredients:
1 tbsp vegetable oil
250 gms chicken breast, cut in cubes
1 /2 cup chicken stock
1 tbsp soy sauce
1 tbsp cider vinegar
1 /2 tbsp brown sugar
1 tbsp cornstarch
1 /2 onion, diced
1 green bell pepper, sliced
1 red bell pepper, sliced
2 tbsp grated ginger
1 mango, cut in cubes
1 /4 tsp turmeric
1 /4 tsp chilli powder
1 /4 tsp coriander powder
1 /4 tsp cumin powder
1 /4 tsp ginger powder
Salt to taste
Method:
Heat oil in a large skillet and add the chicken cubes. Stir occasionally till chicken is cooked through. Once cooked, remove the chicken and set aside in a plate. In a bowl, add the chicken stock, soy sauce, cider vinegar, brown sugar, cornstarch, turmeric, chilli powder, coriander powder, cumin powder and ginger powder. Whisk these ingredients to combine well. Set bowl aside.
In the same skillet used to cook the chicken, cook onions till they turn translucent. Add the green and red bell peppers and cook for 2 minutes. Add the grated ginger and cook for another 1-2 minutes. Stir in the chicken stock mixture and the cooked chicken. Cook, and stir occasionally, till the sauce thickens. Add the mango cubes into the sauce and leave it on low heat till the mango is cooked.
Serve with steamed rice.
Mango ice cream
Everyone loves dessert after a good meal. And mangoes make for delicious desserts. One such dish is mango ice cream. The flavours are just right for a summer afternoon. Serving this ice cream at your next house party will give you some serious cooking cred among your friends.
Ingredients:
500 ml cream
200 gms mangoes, chopped
1 /2 tsp vanilla extract
1 /3rd cup sugar or honey, adjust according to taste
Method:
Blend the chopped mangoes, vanilla extract and sugar/honey till the mixture becomes smooth. In a separate bowl, whip the cream to form soft peaks. Add the mango mixture to the cream and fold it in. Taste the mixture and add more sugar or honey, if needed. Pour the mixture in a container of your choice, cover it and put it in the freezer.
Check the ice cream every hour. When it is half set, take it out and whip again for 1-2 minutes. Pour the mixture back into the container and freeze it overnight.
Serve with honey syrup or with mango chunks.
