Are you feeling bloated or nauseated lately because of the heat and humidity? Even though keeping yourself hydrated in summer is key, drinking litres of water can leave you feeling fuller and pukish. So, you need a probiotic drink that compensates for the food you don’t want to eat and keeps you hydrated as well. That’s where ragi-based probiotic drinks help your gut. They’re light on the stomach, improve digestion, and, thanks to their high fibre content, also support weight loss. So, if you want something refreshing yet fulfilling to curb your hunger, try these ragi drink recipes this summer.

How to ferment ragi flour

Ingredients:

1/2 cup ragi flour

1-1.5 litres water

Method:

Soak the ragi flour in 3-4 cups of water overnight. The next morning, remove the froth that has formed on top of the fermented ragi. Now, mix the fermented ragi with the remaining water to form the ragi slurry. If you are not using fermented ragi, you can simply mix the ragi flour and water until smooth and lump-free, and use it after 10 minutes to make a thick paste which will be used for the drink. Here’s how to make the ragi paste.

In a saucepan, heat three cups of water over medium heat. After five minutes, add the ragi slurry and stir well. Let the mixture thicken for 15 minutes. Keep stirring the mixture in intervals. To check if it is cooked, dip your finger in some water and touch the ragi mix. If the mixture doesn’t touch your finger, it’s cooked. Once cooked, let the ragi mixture cool down at room temperature.

1. Ragi ambali drink recipe

Ingredients:

Thick ragi water paste

2 cups water

4 tbsp thick curd

1 onion, finely chopped

2 green chillies, deseeded and chopped

2-3 strands coriander leaves, chopped

1 tsp salt

Method:

In a bowl, add some thick curd, salt, chopped onion, coriander leaves, and green chillies. Add the thick ragi water paste. Whisk the mixture until lump-free. Add some water to the mixture to get a thin consistency. Stir the drink well and garnish it with some coriander leaves, onions, and green chillies. Enjoy the ragi ambali drink chilled during mid-morning or afternoon to cool your gut and boost metabolism in summer.

2. Ragi malt drink recipe

Ingredients:

Warm and thick ragi water paste

1 tsp jaggery or your preferred choice of a healthy sweetener

1/2 cup milk

1/4 tsp cardamom powder

2-3 almonds, chopped

Method:

In the saucepan containing warm and thick ragi water paste, add some jaggery and stir well until creamy. Lower the flame and pour some milk into the saucepan. Add the cardamom powder and mix well. Turn off the flame after 5-7 minutes. Transfer the drink to a mug and garnish it with chopped almonds. Serve the ragi malt warm.

3. Ragi buttermilk recipe

Ingredients:

Warm and thick ragi water paste

1/2 cup water

A knob of ginger, peeled and chopped

3-4 curry leaves

4-5 coriander leaves

1/2 cup curd

Salt to taste

Roasted jeera powder

2-3 mint leaves

2-3 ice cubes

Method:

In a blender, add curd, curry leaves, roasted jeera powder, coriander leaves, salt, and half a cup of water. Blend the mixture until smooth and runny. Now, add the warm and thick ragi water mixture and blend again. Transfer the ragi buttermilk to a glass and add some ice cubes. Garnish the ragi buttermilk with mint leaves and serve chilled.
