1. Vegetable manchow soup
Ingredients:
1 tbsp butter or oil
Chopped vegetable (carrots, beans, cabbage, capsicum or others of your choice)
1 tsp soy sauce
3-4 tea cups water or 1 vegetable stock cube
1 tsp vinegar
1 tbsp ginger-garlic paste or finely chopped ginger and garlic
2 tbsp cornflour (dissolved in half cup water)
Salt and pepper to taste
Fried noodles (optional)
Method:
Heat oil/butter and sauté ginger-garlic paste for a minute.
Add vegetables and stir-fry for 2-3 minutes.
Add soy sauce and vinegar, and cook for 1 minute.
Pour in water or stock and stir in the cornflour slurry to thicken.
Bring to a boil and season with salt and pepper.
Serve with fried noodles.
2. Mixed vegetable soup
Ingredients:
Chopped vegetables of your choice
1 small onion, chopped
3-4 tea cups of water or 1 vegetable stock cube
1 tbsp ginger-garlic paste
1 tbsp butter or oil
Salt and pepper to taste
Fresh coriander for garnish
Method:
Heat oil/butter and sauté onions and ginger-garlic paste for 2 minutes.
Add vegetables and stir-fry for 2-3 minutes.
Pour water or stock and bring to a boil.
Season with salt and pepper.
Simmer for 5-6 minutes until veggies are cooked.
Garnish with coriander.
3. Classic tomato soup
Ingredients:
4 medium-sized tomatoes, chopped
Small onion, chopped
1 tbsp ginger-garlic paste
1 tbsp butter
1 and 1/2 tea cups of water
Salt and pepper to taste
Fresh cream (optional)
Method:
Heat butter and sauté onions and ginger-garlic paste for 2 minutes.
Add tomatoes and cook until soft (about 3 minutes).
Add water and boil for 2 minutes.
Blend the mixture, strain, and return to the pan.
Add salt and pepper, then simmer for 2 minutes.
Serve with a swirl of cream.
4. Sweet corn soup
Ingredients:
2 tbsp butter
1 cup canned sweet corn (or boiled fresh corn)
2 tbsp cornflour (dissolved in half cup water)
1 tbsp ginger-garlic paste
3-4 tea cups water or 1 vegetable stock cube
1 tsp soy sauce
Salt and pepper to taste
Coriander for garnish (optional)
Method:
Heat butter and sauté ginger-garlic paste for 1 minute.
Add sweet corn and stir for 2 minutes.
Pour in water or stock and cornflour slurry to thicken.
Bring to a boil.
Add soy sauce, salt, and pepper.
Simmer for 2 minutes.
Garnish with coriander and serve.
5. Chicken soup
Ingredients:
1 tbsp butter or oil
1 cup shredded chicken
1 small onion, chopped
1 tbsp ginger-garlic paste
3-4 tea cups of water or 1 chicken stock cube
1 tsp soy sauce
1 tsp vinegar
Salt and pepper to taste
Fresh coriander for garnish
Method:
Heat oil/butter and sauté onions and ginger-garlic paste for 2 minutes.
Add shredded chicken, soy sauce, and vinegar.
Pour in water or chicken stock and bring to a boil.
Season with salt and pepper.
Simmer for 2-3 minutes.
Garnish with coriander.
Note: You can also add some chopped vegetables to the soup.
6. Spinach and lentil soup
Ingredients:
1 tbsp butter or oil
1 cup spinach, chopped
1/4 cup lentils, red or yellow (masoor dal or moong dal), washed
1 small onion, chopped
3-4 tea cups of water
1 bay leaf (tej patta)
1 tbsp ginger-garlic paste
Salt to taste
Method:
Heat oil/butter and add bay leaf.
Add onions and ginger-garlic paste and sauté for 2 minutes.
Add lentils, spinach, and water.
Boil for 7-8 minutes.
Season with salt.
7. Mushroom soup
Ingredients:
1 tbsp butter or oil
8-10 sliced mushrooms
1 small onion, chopped
1/2 tbsp vinegar (skip if you don’t want a sour-tangy taste)
3-4 tea cups of water
1 tbsp ginger-garlic paste
Salt and pepper to taste
Fresh coriander for garnish
Method:
Heat oil/butter and sauté onion and ginger-garlic paste for 2 minutes.
Add sliced mushrooms, salt, pepper, and vinegar, and saute for 2-3 minutes.
Add water and boil for 5-6 minutes.
