Ingredients:
4-6 goat trotters (cleaned)
1 large onion, sliced
1 medium tomato, chopped
Salt to taste
1 tbsp ginger garlic paste
2-3 green chillies, slit
1 tsp turmeric
1 and 1/2 tsp coriander powder
1 tsp cumin powder
Black pepper to taste
1 bay leaf (Tej patta)
1 inch cinnamon
3-4 cloves
1-2 tbsp ghee
5-6 cups water
3-4 coriander leaves
Lemon juice (optional)
Method:
In a pressure cooker, heat some ghee over a medium flame. Add the bay leaf, cinnamon, and cloves. Once they start to crackle, add onions and sauté until golden brown. Now, add the ginger-garlic paste and sauté again. Add chopped tomato, cumin powder, coriander powder, black pepper and salt. Cook the stew until the mixture starts to release ghee. Add the trotters and mix them well with the masala. Pour the water and sprinkle some salt. Close the cooker’s lid and cook on medium heat for 6-8 whistles. Turn off the heat and let the pressure release naturally. If you prefer a more tender paya, cook for an extra 1-2 whistles.
Now, open the cooker and simmer for another 10-12 minutes for better flavour. If you want a thicker, more gelatin-rich broth, simmer it uncovered for 20 minutes. Now, turn off the heat and transfer the paya soup to a bowl. Squeeze a teaspoon of lemon juice, and mix and garnish with some coriander leaves. Enjoy the paya soup warm.
