After a fun Diwali week, it’s time to celebrate one of the most joyful festivals of Bihar, Chhath Puja. During this period, devotees fast for four days to honour the Sun God and Goddess Shahthi (Chhathi Maiyaa). And right at the centre of this festival, lies a golden brown, crisp sweet called thekua that every Bihari household swears by. Made with jaggery, ghee and wheat flour, thekua isn’t just a snack. It’s a prasad that symbolises gratitude for the Sun God. But do you know how to make this traditional sweet? Try this simple recipe to make a crunchy thekua this Chhath Puja 2025.

Total time: 20 minutes
Ingredients:
1 cup jaggery powder
1/2 cup water
2 cups wheat flour
1 tsp cardamom powder
1 and 1/2 cups desiccated coconut
1 tsp fennel seeds
4-5 tbsp ghee
Olive oil for frying
Method:
In a saucepan, heat some water for 1-2 minutes. Add the jaggery powder and stir it until fully dissolved. Make sure there are no lumps in the mixture. Let the jaggery syrup cool at room temperature. Now, take some wheat flour and add fennel seeds, cardamom powder, and desiccated coconut. Mix the ingredients well. Add the jaggery syrup and ghee and knead the mixture until smooth. Let the dough cool at room temperature for 7-10 minutes. In a saucepan, heat olive oil for 3-4 minutes on a medium flame.
Meanwhile, create small balls of the dough. If you have a thekua mould, you can keep the dough in it and press it to form a thekua. If you don’t have a mould, flatten the dough ball slightly with a rolling pin (belan). Now, using the tip of your thumb and forefinger, make a leaf-like structure on the edge of the flattened thekua. Use a toothpick to create a leaf impression on the thekua.
Now, fry the thekua pieces until crisp. Let them cool at room temperature. Garnish them with some desiccated coconut and rose petals. The traditional Bihari thekua is ready to be served. Try this easy recipe to make thekua for Chhath Puja 2025.
